MAXIMISE PROFIT WITH FOREQUARTER ROASTS

Friday, September 05, 2008

With increasing costs impacting on the foodservice industry as a whole, public service caterers in particular need to find more cost effective ingredients to help them produce quality meals.

Forequarter meat offers an ideal alternative to the more traditional cuts and it is excellent value for money. That’s why BPEX and EBLEX have joined forces and developed a comprehensive guide to preparing and cooking beef, lamb and pork roast meats from the forequarter.

Available on DVD, ‘Forequarter Roasts - A Practical Guide for Butchers and Caterers in the Public Service Industry,’ features a step-by-step guide for butchers showing how to best cut and trim the various primals, as well as cooking hints and tips for caterers.

BPEX foodservice trade manager, Tony Goodger, said: “Caterers and butchers should be looking to build good working relationships to ensure clear communication between both parties. A clear specification from caterer to butcher will guarantee the meat they receive will be consistent and to the standard they require. Then, once in the kitchen and cooked and served with care, roasting joints from the forequarter will produce consistent results for the caterer and quality meals for dining customers.”

The beef, lamb and pork cuts demonstrated in the DVD are also linked in with EBLEX’s Meat Purchasing Guide for beef and lamb, plus the Meat Buyers Guide – both useful tools designed to help caterers and butchers meet the same specifications.

Tony added: “What’s more by sourcing beef, lamb and pork that carries the Quality Standard Mark (QSM), caterers can be reassured that the meat they are using is fully traceable and produced to high standards of welfare.”

Caterers and catering butchers can claim their free copy of the DVD by contacting BPEX Ltd on: 01908 844114, by email: foodservice@bpex.org.uk or via the website, www.porkforcaterers.com.
